Terroir & Winemaking

  • Vineyard: 40-year-old vines planted in limestone-clay and sandy-clay soils.
  • Cultivation & Harvest: Environmentally managed; mechanical tilling and weeding; hand-harvested on October 1st and 10th, 2018.
  • Fermentation & Aging: Cold maceration → punch-down during alcoholic fermentation → hot maceration; malolactic fermentation in new oak barrels; aged in new oak for one year.

Tasting Notes

  • Aroma: Black cherry and plum with hints of cedar.
  • Palate: Medium-bodied, supple tannins, and a mineral-driven finish.

Serving & Pairing

Serve at 16–18°C, decant for 30 minutes. Pairs well with grilled steak, roast lamb, or aged hard cheeses.
